Crafted from our finest estate-grown fruit, Cephas is a wine with no compromises. The 2001 vintage was a year of good balance as the result of a warm summer and a lasting mild autumn. This allowed us to wait patiently and hand-pick the grapes from each
individual parcel when their flavour was at a peak. The wines from the different parcels have then been matured for 20 months in French oak.
Components have been basket pressed, some fermented in small open top fermenters and others partfermented in barrel. The final blend is a wine of flawless balance and impeccable structure which delivers the expected voluptuous, rich and full-bodied
profile of the very best of the Pyrenees.
Winemaker’s Comments
Colour: Deep Magenta colour.
Nose: A superb nose showing immense fruit flavours of blackberry and blueberries coated with inviting dark chocolate and mocca aromas.
Palate: The wine opens with an array of mouth-filling flavours that combine all the black and red fruit characters of shiraz and cabernet layered on the palate with velvety smooth tannins and creamy vanillin. A long finish with a lingering mocca
aftertaste.
