Harvest/Winemaking
Being harvested solely from the initial block of Cabernet planted on the estate in the late 1960’s, this wine is truly crafted from within the vineyard and handled separately within the winery from its arrival. The fruit was placed into a small open‐top fermenter as whole berries and then submerged as to give a richness and complexity that delivered a silky and balanced wine. A natural ferment that was managed over a couple of weeks at low temperatures resulted further developed on the delicacy of the fruit while maintaining the concentration of the old vine fruit.
Winemaker Comments
Showing elegance and balance this wine has layer upon layer of flavours complemented by brooding dark fruit aromatics that pairs with generous red berry flavours that are underpinned by notes of varietal
herbs. Medium bodied and mouth filling, the tannins are succulence and seamless which linger long after the wine.
