Harvest/Winemaking
The Shiraz was harvested over multiple days with up to 2 weeks between picking. This allowed for great varietal expression and diversity showing what a true Shiraz from the Pyrenees can exhibit.
Small batch open‐top fermentation with whole berries and submerged cap gave a richness and complexity that delivers a silky and balanced wine. The addition of Mourèvdre is a luxury few wineries can have and adds to the wine in so many facets, given its spice and earthy nature.
