Crafted exclusively from estate grown fruit, Taltarni Cabernet Sauvignon 2012 honours the winery’s international reputation for making superb red wines.
The fruit was destemmed only and whole berry fermented in small open‐top fermenters. This technique allowed the primary fruit characteristics to be brought through to the end wine.
The ferments took approximately 8 days to extract the perfect balance of structure and aromatics prior to pressing. The wine then undertook malolactic fermentation in a mix of new to 4‐year‐old French oak barriques and then aged in those same barrels for 18 months.
Winemaker Comments
A very attractive deep plum‐red colour, the 2012 Cabernet Sauvignon has an elegant, varietal nose of cassis, spice and blackberry. These characters are complemented on the palate by a medium bodied
wine with velvety tannins and luscious layers of intense varietal fruit and savoury notes.
