Crafted exclusively from Estate grown fruit, Taltarni Cabernet Sauvignon 2006 honours the wineries international reputation for making superb red wines. Taltarni's great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees producing wines hallmarked by distinctive regional characteristics.
2006 was a warm, dry vintage in the Pyrenees. The Cabernet was monitored regularly and picked at the optimum flavour ripeness.
The grapes were then crushed and destemmed and fermented on skins in stainless steel. After pressing, the wines completed malolactic fermentation in a mix of new and old French
barriques. The wine was racked, and blended with a small amount of Merlot and Petit Verdot to add depth and palate weight.
Winemaker Comments
A very attractive deep plum red colour with purple tints, the 2006
Cabernet Sauvignon has an elegant, lifted nose of violets,
blackberries and spice. These characters are complemented on the
palate by fine tannins and spicy, mocha oak notes.
