Harvested in the cool of the morning the fruit was destemmed into small, open‐top fermenters to minimise any mechanical impact while also retaining a small portion of the whole bunch. Using a combination offerment techniques including heading down, plunging and pump-over resulted in a finely balanced wine driven by its varietal flavours andnatural structure. The parcels were co‐inoculated for alcoholic and malolactic fermentation. It took ten days on skins to extract the perfectbalance of structure and aromatics prior to pressing. The wine was then allowed to mature in 15% new and seasoned French oak barriques for 12 months.With a vibrant red and a regal purple hue, the 2023 Pyrenees Estate Cabernet Sauvignon is a true varietal expression of the cool climate from which it hails.
